      <content:encoded><![CDATA[<a class="style1" href="http://www.utahstories.com/sosala_south_salt_lake.htm">Utah Stories Front Page</a><br />New York, Paris, Milan, SoSaLa?<br /><br />November 18th, 2008<br /><strong>Could South Salt Lake become the next fashion capital?</strong><br />by Rebecca Edwards<br /><br />If it seems unlikely that South Salt Lake, or SoSaLa as it has been coined recently, could become the latest hot spot for fashion and entertainment, it may be time to reconsider. With the likes of East High becoming forever imprinted on the pop culture psyche via the High School Musical (HSM) movies, and the hottest literary phenomenon since Harry Potter, the Twilight series, being penned by a BYU alum, it seems the time is ripe for Utah to splash onto the fashion scene as well.<br /><br /><strong>Central Point South Salt Lake<br /></strong>One man has a big vision for the future of SoSaLa and Utah's place on the world fashion stage. Stacey Eastman, founder and president of Pulse Management, has partnered with Elite Model Management to open a full-fledged talent agency in SoSaLa. Eastman's hip office is the cornerstone of the new Market Street Station shopping and urban living center being developed at 2100 South and Main.<br /><br />Despite swanky, new digs and the recent attention the entertainment world has given Utah thanks to HSM and American Idol runner-up David Archuleta, the question still remains: Why Utah?<br /><br />"I have operated in seven different cities for over 21 years in many different markets," Eastman said. "And all of our superbowl rings (Vogue covers) have been procured by Utah talent alone."<br />For the past two decades Eastman has discovered and represented some of the biggest models in the world, including Utah discovery Hye Rim Park who has walked runways for top designers all over the world and graced the covers of magazines like Vogue.<br /><br />Pulse, whose mission includes "slamming forth an intense revolution of raw, clean, talent" was established two decades ago by Eastman, a successful fashion photographer. In that time, Eastman has discovered some of the top models in the business, including recent phenom (and Utah native) Ali Stephens. Ali is the latest in a long line of successful models that Eastman and his team have discovered in Utah. Within three days of Pulse discovering her, she was walking the runway in Milan. Another Utah discovery, Hye Rim Park, has not only graced the cover of Vogue, but has been heralded by editors and photographers alike as one of the top ten models in the world.<br /><br />SoSaLa is in good company. Elite also has modeling agencies in Chicago, Miami and New York.<br />The success of talent discovered in Utah caught Eastman's attention, and it's not letting go. Over the past ten years, he has been working more and more with Utah models, leading to the opening of the SoSaLa office in June, 2008. This is the first office Elite, one of the world's leading agencies, has opened in a market that is virtually unknown to the fashion world at large.<br /><br />"This is the first time since 1965 that Elite has entered into a partnership like this, and it's in South Salt Lake. There's something in the water," Eastman jokes. "When Brigham Young said that 'this is the place,' he didn't know how right he was. Elite has launched more industry icons over the past 65 years than anyone else, and we have been able to accomplish this partnership solely because of the people we have been blessed to work with."<br /><br />Eastman is not shy about crediting the lifestyle and family values of Utahans as contributors to the success of his models. "I haven't been able to put my thumb on it, but in 21 years the only thing I can come up with is that it's got to be the lifestyle. Whether part of the predominant religion or not, religion attracts other religious people, and that is accompanied by a certain lifestyle."<br /><br />Pulse models are selected not just for physical beauty, but for being well-rounded and having a strong family support system. Eastman has found that although Utah is not immune to the typical pitfalls of being a modern teenager, such as rebellion and drugs, the kids he works with from Utah seem to display behavior that is contrary to what he finds in the rest of the country.<br /><br />Central Point apartments have attracted young hip professionals, like Justin Erikson pictured above.<br /><br />"Predominantly, kids are the best here," he said. "It has a lot to do with the parents and the entrepreneurial attitude of the state. People here are industrious. They live up to the slogan of the beehive state. They are healthy, driven, very entrepreneurial-minded, and passionate. If I go to Portland, to get the kids to do anything is like pulling teeth."<br /><br />Eastman prefers to sign models who are more than just a pretty face, with involvement in school activities, sports, church, and good grades being crucial factors. Since 1992, he says he has found those qualities most often in kids from Utah. The contradiction of Utah's image and that of the fashion industry is not lost on Eastman, but he remains confident that the move to Utah is the right one. And Utah seems to be welcoming Pulse Management with open arms.<br /><br />"We had so much political support," Eastman said, describing the grand opening street party he held in SoSaLa that was attended by 4,000 people. "This is not what you are used to in the fashion world. If Elite opened a second office in Manhattan, the mayor wouldn't go out of his way to endorse it. We received so much support from the president of the Utah Film Commission, Governor Huntsman, the mayor of South Salt Lake, and the police and fire chiefs. The support has been overwhelming for us."<br /><br />The welcoming and supportive attitude of the Utah community has even caught the attention of the Elite office in Manhattan, according to Eastman. Attention that Eastman looks forward to keeping. Pulse has a variety of upcoming events planned, including partnerships with the Twilight movie premiere this coming weekend, the Sundance Film Festival, and an upcoming fundraiser for Huntington's disease.<br /><br />Eastman has a powerful vision for what he calls the "New SoSaLa," and he plans to bring that vision to fruition through creative partnerships with local and worldwide entertainment and fashion leaders. Pulse has partnered with Wasatch Helicopters to offer sightseeing tours, heli-boarding, and heli-skiing, leading to a new helicopter pad across from the Pulse office. In addition, the number one casting director in Utah is putting in an office right next door.<br /><br />"We're in the process of building a production capital, encompassing all aspects of the entertainment industry," Eastman said. "We're partnering with local clothing designers, the film industry, spas, salons, sound stages. This is what keeps us at the top of the totem pole, and I'm the only one in the world with the relationships to pull it off."<br /><br />Eastman is committed to making a difference in the entertainment industry, and unbelievably to some, Utah is one of the keys to making that happen. As he said, "When we find a girl we can't always tell when she will make it, but we can tell if. In South Salt Lake, it might take months, a year, or longer, but it will happen. It's only a matter of time. We're changing this town."]]></content:encoded>

      <title><![CDATA[Heart Healthy Holiday Tips]]></title>

      <content:encoded><![CDATA[<p>The holiday season officially begins with Thanksgiving and ends after the New Year’s celebrations leftovers are gone.  Whether you celebrate Christmas, Hanukkah, Kwanza or any other winter holiday, this can be the hardest time of the year to follow heart healthy habits!</p>
<p>Here are some tips to help get you through the holiday season:</p>
<p>Heart Healthy Holiday Eating Tips:<br />
1)	Do not go to holiday parties hungry to avoid overeating at the party.   Eat regular meals before the party and do not skip meals.  Drink plenty of water before you go.<br />
2)	Avoid talking and socializing around the buffet or in the kitchen.<br />
3)	Watch your portion sizes.  Moderation is key.<br />
4)	Eat slowly! Put your fork down between bites. Eating slower allows you to feel full when you have eaten enough.<br />
5)	Avoid high fat items.  Fill your plate with healthy choices like fruits and vegetables.<br />
6)	Bring a healthy meal or snack to a potluck dinner.<br />
7)	Take healthy snacks with you when you go food shopping. NEVER go food shopping when you are hungry.<br />
8)	If you are the cook, select healthy dishes prepared in a healthy manner.<br />
a.	Try to bake, broil or grill food.  Avoid fried foods.<br />
b.	Use low fat sour cream and sauces.  Avoid cream sauces.<br />
c.	When baking, try to use fat free sprays or lower fat ingredients.<br />
d.	Try to add beans to salads, casseroles and appetizers. Beans add fiber to the meal and helps you feel fuller.<br />
e.	Select whole wheat and whole grain products like crackers, bread and pasta.  Avoid white flour.<br />
f.	Serve fresh fruit and vegetables. Include fresh fruit in dessert options with low fat cool whip or dark chocolate.<br />
g.	Offer bite-sized desserts that are low fat.<br />
h.	User smaller plates to encourage people to take smaller portions.<br />
i.	Serve fruit and vegetables as the main dish and meat as a side dish.</p>
<p>Heart Healthy Drinking Tips:<br />
1)	Limit alcoholic beverages to one or two servings per day.<br />
2)	Drink a glass of water in between alcoholic beverages.<br />
3)	Eat food prior to and while drinking alcoholic beverages.<br />
4)	Do not drink and drive.<br />
5)	Choose lighter options to cut back on extra calories. Try spritzers, lite beer or low calorie mixers. Avoid drinks mixed with cream and frozen drinks.)</p>
<p>Heart Healthy Activity Tips:<br />
1)	Participate in outings that involve physical activity like skiing, sleigh riding, ice skating and walking.<br />
2)	At the shopping malls park in the furthest spot from the store to increase your walking.<br />
3)	Go window shopping and enjoy the holiday decorations. Take your pedometer with you and count your steps.  Aim for 10,000 steps per day!<br />
4)	Dance at holiday parties.<br />
5)	Schedule exercise/physical activity into you routine. Exercise increases your energy level.<br />
6)	Take the dog for a walk and enjoy the holiday decorations in the neighborhood.<br />
7)	Go Christmas caroling.<br />

Whether you celebrate Christmas, Hanukkah, Kwanza or any other winter holiday, this can be the hardest time of the year to follow heart healthy habits!</p>
<p>Here are some tips to help get you through the holiday season:</p>
<p>Heart Healthy Holiday Eating Tips:<br />
1)	Do not go to holiday parties hungry to avoid overeating at the party.   Eat regular meals before the party and do not skip meals.  Drink plenty of water before you go.<br />
2)	Avoid talking and socializing around the buffet or in the kitchen.<br />
3)	Watch your portion sizes.  Moderation is key.<br />
4)	Eat slowly! Put your fork down between bites. Eating slower allows you to feel full when you have eaten enough.<br />
5)	Avoid high fat items.  Fill your plate with healthy choices like fruits and vegetables.<br />
6)	Bring a healthy meal or snack to a potluck dinner.<br />
7)	Take healthy snacks with you when you go food shopping. NEVER go food shopping when you are hungry.<br />
8)	If you are the cook, select healthy dishes prepared in a healthy manner.<br />
a.	Try to bake, broil or grill food.  Avoid fried foods.<br />
b.	Use low fat sour cream and sauces.  Avoid cream sauces.<br />
c.	When baking, try to use fat free sprays or lower fat ingredients.<br />
d.	Try to add beans to salads, casseroles and appetizers. Beans add fiber to the meal and helps you feel fuller.<br />
e.	Select whole wheat and whole grain products like crackers, bread and pasta.  Avoid white flour.<br />
f.	Serve fresh fruit and vegetables. Include fresh fruit in dessert options with low fat cool whip or dark chocolate.<br />

h.	User smaller plates to encourage people to take smaller portions.<br />

It's a nice idea, but. . . well, doesn't giving thanks feel like something one should do a bit more often? <a href="http://www.galadarling.com/">Gala and the iCiNG community</a> do this every Thursday, and even though I don't participate on my blog, I like to keep the "Things I Love Thursday" badge on my sidebar to show my support and whatnot. But, since today is both Thanksgiving <span style="font-style: italic;">and </span>a Thursday, I think it's time to run the first ever Fashion-y Blog TILT. It will be body-related and not in list form, but it's a TILT all the same. Can you dig it?<br /><br /><br /><div style="text-align: center;"><a href="http://galadarling.com/"><img src="http://galadarling.com/images/badges/tiltlexi.jpg" border="0" /></a><br /><br /><div style="text-align: left;">Today I am thankful for my appearance. It sounds vain, I know, and it pretty much is, but let me explain.<br /><div style="text-align: center;"><div style="text-align: left;"><div style="text-align: center;"><a href="http://www.modernmagik.blogspot.com/" target="_blank"><img src="http://i2.photobucket.com/albums/y40/diditrocious/inspiredbynubs.jpg" alt="" border="0" /></a><br /><div style="text-align: left;"><span style="font-size:85%;"><span style="font-style: italic;">This photo is a bit of an older one (hence the bangs and sandals that would allow for frostbite should I wear them now); details on the outfit can be found </span><a style="font-style: italic;" href="http://modernmagik.blogspot.com/2008/07/doing-nubby.html">here</a><span style="font-style: italic;">.</span></span><br /></div><br /><div style="text-align: left;">Over the past few years, I've become a lot more comfortable with my body. I was never one of those girls who stands in front of the mirror for the sole purpose of bashing every body part, but I've definitely had a mental list of my physical "flaws"at any given time - large nose, knobby knees, a non-flat stomach, over-large boobs - but nothing I've ever found particularly horrific. It may seem weird to list those "flaws" here where everyone can look at my photos and critique how I look, but the fact is I've been appreciating these so-called physical imperfections a lot more lately. Large nose? <a href="http://modernmagik.blogspot.com/2007/10/how-to-accept-your-body-and-move-on.html">Not such a deformity after all</a>. Gives my face character, I think. Knobby knees? I think I'm the only one who even notices these, to be honest. I am now nonplussed by them. Non-flat stomach? It's not really natural for most women to have flat stomachs. Even with large amounts of exercise I've never been able to achieve this, because it's a tiny curve I'm meant to have. And curves are a pleasing shape, after all. And my boobs? Again, curves are pleasing to the eye. I think I like 'em after all, even if they make bikini shopping quite difficult.<br /><br />Yes, I feel a little awkward having written about my chest size knowing that classmates, family members, friends, and the like read this, but I'll let it be. Not something to be embarassed about, really. I've been thinking a lot about body image and how it shouldn't be considered vain or taboo to appreciate the way we look in all its uniqueness. Why should it be? Isn't it a much healthier mindset to find the beauty in ourselves and be proud of that than to be vocal about our hated features while keeping quiet about our loved features? I think so. And for that matter, since I'm spewing out random thoughts as it is, I wish compliments could be given more freely in our society. I often compliment strangers on their clothing or accessories, which never fails to elicit a smile and some friendly vibes (if not friendly conversation), but why is it inappropriate to tell a stranger, "Hi, I just wanted to say I think you have the most amazing legs"? Why can't we receive compliments like these without feeling overly scrutinized or hit on? The fact is, we all notice the way people look, albeit not to the same degree we notice our personal appearances, and it would be good for us to be more vocal about this in a positive way when we live in a society full of eating disorders, idolized stick-thin models, and obesity.<br /><br />For now, I stick to the safe appearance-related compliments when I want to brighten someone else's day. Eyes and hair, folks, eyes and hair.<br /><br />I would also like to add that, having spent the last 20 minutes or so ranting about body image, I think the preoccupation our society has with physical appearance is kind of ridiculous. Let's also take the time to appreciate the fact that our bodies are the vessels that keep us alive, that they pump blood, take in oxygen, fight illness, allow us to move and think and experience joy, and generally give us everything we have.<br /><br />That's my long, rambling, tangent-filled TILT. I hope it didn't make me sound disgustingly positive, disgustingly appearance-obsessed, or disgustingly vain.<br /><br />What do you love and appreciate about your body? It's a great exercise to list your "flaws" and then think of reasons to appreciate them, but I would also love to hear about what you find absolutely gorgeous about yourself. A collection of positive comments always seems to induce extreme happiness (another reason why <a href="http://www.galadarling.com/">Miss Gala's site</a> is so fantastic), so let's make it happen. <p>&#8220;Who would turn down an opportunity like that? Mariah has a fascinating life.&#8221;</p>
<p>The stage show is set to feature some of the 39-year-old&#8217;s most highly publicized troubles including her divorce from Sony boss Tommy Mottola in 1997, arguments with record producers and her reported physical and emotional breakdown. <span id="more-4188"></span></p>
